The Retro Party Egg

I haven’t seen a stuffed egg for years. Nevertheless they are simple, cheap and effective. Dress them up with prawns or smoked salmon, keep them simple with some ham, olives or some radish slices. Garnish at will or serve them plain, the choice is yours.
Serves a crowd
10 hard boiled eggs6 tablespoons of mayonnaisesalt, pepper
Shell the eggs and cut them in half length ways.
Carefully remove the yolks from the eggs and pass them through a sieve.
Beat the egg yolks with the mayonnaise, salt and pepper.
Use a teaspoon or piping bag to fill the egg whites with the mixture.
Arrange on a platter, garnish, or not and serve.
