Here sweet, citrus Clementines are poached in a spicy, orange liquer syrup. Serve them with some ice-cream or creme-fraiche or bottle and store them for up to a month….ready to use just in time for Christmas.
12 clementines200 g caster sugar6 cloves1 cinnamon stick250 ml water250 ml orange liquer such as Grand Marnier or Cointreau2 tablespoons lemon juice
Using a sharp knife, remove the peel and pith from the clementines
Place the sugar, water, cinnamon and cloves in a pan and heat gently until the sugar dissolves. Bring to the boil, turn down the heat and simmer gently for five minutes.
Now add the clementines, lemon juice and liquer to the pan and continue to simmer for another 20-25 minutes.
Serve them up or they may be bottled in a one litre sterilised jar, with the syrup. They may be stored in the fridge for up to a month. Once opened they will keep for a week, but they won’t last that long.
