Milk & Honey Pudding

This is a simple, milky pudding. Serve it like a rice pudding on its own or with some stewed fruit or even as an alternative to breakfast porridge. Using soya milk will make this dish especially creamy.

Serves 4

100 g of quinoa grains
500 ml full cream milk or soya milk
3 tablespoons of honey
1 teaspoon cinnnamon
Butter for greasing

Preheat the oven to 170°C or gas mark 3.

Grease an ovenproof dish.

Place the quinoa grains in the pan with the milk and honey and bring to the boil, stirring all the time. Turn down the heat and allow the mixture to simmer for about five minutes. Pour into the prepared dish and sprinkle with the cinnamon. Bake for approximately fifty minutes.
